If you have been around me long enough you know that I have a particular weakness to donuts....especially on the weekends! For whatever reason, when Saturday/Sunday rolls around I tend to wake up thinking how nice it would be to have a donut :)....It is sad. I could never work at a donut shop because I would gain way to much weight and would leave nothing for the customer to take home and enjoy as well.
I'm also pretty picky about my donuts. I think it is because I grew up in a small town but I when I am looking for a donut place...I'm NOT looking for any large chain donut places...KrispyKreme and Dunkin Donuts maybe a great choice for some, but I want something local (if they only accept cash....my guess is that this little mom and pop shop has much more to offer this girl). *Note...I will have a krispykreme donut here and there BUT it just doesn't always hit the spot for me* In Searcy I loved Daylight Donuts....even while living in Rogers Daylight was my favorite donut place (yes I know it is a chain....but it was amazing). Fayetteville had Rick's for your morning treats and then there was a place near by our first house that I went to that was great as well. When we moved to VA I drove 40 minutes to find a good mom and pop donut place that trust me did NOT disappoint! And here in CA we have had a few good donuts at Surfin Donuts not too far from the area. The only negative to loving donuts is that you have to get up EARLY to miss the crowds and drive to the place you are wanting to go indulge yourself in...and after a while the cost can add up.
Last weekend I had another craving for some donuts. I have always been scared to death of making them from scratch but I had remembered reading online that there was a way to make donuts using refrigerated biscuits. Low and behold I had a can of Pillsbury refrigerated biscuits (the jrs size) in my fridge....so what better day than Sunday morning to give it a try! I looked online to get the jist of what it would entail to make some simple donuts and I was pleasantly surprised by the outcome! Here is what I did....
1. I cut out center holes in the biscuits using an empty spice cap that I had in my pantry.
2. I laid out all my ingredients near the stove so that it would be like an assembly line.
3. Took out my cast iron skillet (any skillet or fry daddy should work) and heated some oil in it over med high heat. (I put enough oil in the skillet to cover half of the biscuit).
4. Placed my donuts in the hot oil and watched them like a hawk! In no time they were golden brown on one side and so I turned them over and let the other side cook for 30 seconds or so.
5. Take the donuts out of the skillet. Place them on a paper towel covered plate.
6. Dipped them.....um covered them with a cinnamon, sugar, and a dash of nutmeg mixture.
7. Indulged in my yummy donuts!
We absolutely loved them! Literally the entire process from set up to cook to eating took about 15 minutes! So it is worth trying it out sometime!! I used the cinnamon sugar mix for my topping and we loved it, but next time we may try doing a "frosting" with milk, powdered sugar, and vanilla/almond extract. Just google easy donuts from refrigerated biscuits and you are bound to get a ton of great ideas and tutorials....I hope you try them! I'm going to keep doing this every once in a while....Especially once Julia comes and I need a little Saturday/Sunday morning pick me up! I'm wanting to also try a recipe on pinterest for either pumpkin spice latte's or Starbucks Carmel Apple Spice in the crockpot with the donuts...I think it just screams fall to me! This was so fun for Andrew and I! Can't wait to do it again for when company comes over or when Julia gets old enough to enjoy these treats as well!
